Roasted Tomato Pasta with Feta and Shrimp

Roasted Tomato Pasta with Feta and Shrimp brings together the best of oven-roasted flavors with the creamy saltiness of feta and the succulence of shrimp. Sweet cherry tomatoes, whole garlic cloves, and a block of feta cheese roast together until caramelized and bubbling. Then, everything is tossed with al dente pasta and pan-seared or roasted shrimp for a decadent yet easy-to-make meal that feels fancy with minimal cleanup. A hit of lemon juice or fresh herbs like basil or oregano makes it pop. It’s weeknight-friendly but dinner party-worthy.
